Apple Crumble



Ingredients

  • 4 green or red apples (or a combination of both)
  • 1 tablespoon raisins or currants
  • 1⁄2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon juice
  • 2 1⁄4 tablespoons maple syrup
  • 100g mixed nuts, such as slivered almonds, macadamias, skinless hazelnuts and pistachios
  • 4 tablespoons rolled oats
  • 1 tablespoon shredded coconut
  • 2 tablespoons Kara Organic Virgin Coconut Oil
  • coconut yoghurt, to serve

Method

  1. Preheat the oven to 180°C (350°F).
  2. Line a large baking tray with baking paper.
  3. Cut 1.5cm from the top of each apple – you can either snack on these apple ‘lids’ or bake them.
  4. Make a slight incision around the centre of each apple and remove the cores.
  5. Using a thin-edged teaspoon, carefully remove the inside of the apple, leaving 1-1.5cm of the ‘shell’ intact to create a bowl.
  6. Coarsely chop the carved-out apple bits into 1 cm pieces and place the apple pieces in a bowl.
  7. Add the raisins, ground cinnamon, vanilla extract, lemon juice and 1 teaspoon of the maple syrup. Mix until well combined.
  8. Fill the apples with the mixture and wrap each apple with foil, then place along one side of the baking tray.
  9. Coarsely chop the mixed nuts and combine in the bowl with rolled oats, shredded coconut, maple syrup and Kara Organic Virgin Coconut Oil.
  10. Put the nut crumble mixture onto the other side of the tray, transfer the tray to the oven and bake for 15 minutes, or until the crumble mixture is golden.
  11. Remove the crumble mixture to a bowl.
  12. Remove the foil from the apples, then bake for a further 5 minutes, or until the apples are tender.
  13. Top the apples with the crumble mixture and serve warm or cooled, with coconut yoghurt.
