Coconut Milk Rice Pudding with Mango



  1. Heat the milk to a boil in a saucepan.
  2. Add the arborio rice and sugar, cook over very low heat for 20 minutes.
  3. Add half of the Kara Classic UHT Coconut Milk, lime zest and juice.
  4. When the rice is cooked, pour the balance Kara Classic UHT Coconut Milk, stir well, and leave to cool.
  5. Transfer the rice pudding in 4 glass containers by inserting thin slices of fresh mango between two layers of rice pudding.
  6. Can be served slightly warm, or chilled.
